
This Valentine's Day, Give Your Sweet Love the Healthy Treatment
Most of us know that miso soup is really healthy, but not very romantic, right? An expression of love in Japan is to make, or even offer to make someone's miso soup. It says, "I care about you, your health, longevity, and lifespan." Now you can say that with healthy desserts!

Be My Sweet Macro-tines Chocolate Truffles

Makes approx 24 truffles Truffles:
1 cup soy milk
18 ounces dairy-free, grain-sweetened chocolate chips
2 tablespoons agar flakes
1 tablespoon cocoa powder For the coating;
Cocoa Powder
Roasted hazelnuts, finely chopped
Roasted coconut flakes
To make the truffles:
1. In a saucepan over medium heat, bring the soy milk and agar to a simmer. Dissolve completely.
2. Add the chocolate chips and stir well until melted.
3. Remove from heat, transfer mixture to a baking pan.
Allow to cool, then refrigerate for 1 hour.
4. Using a spoon, scoop up about 1-ounce of the chocolate mixture.
Toll between your hands to form a small ball. Continue until mixture is used up.
5. Roll each ball in the cocoa powder, shopped hazelnuts or coconut flakes.
6. Store in the refrigerator until ready to serve. www.loveeric.com

To make a gorgeous presentation, make two additional truffles by varying the recipe at Step 5. In addition to the cocoa/hazelnut truffles above, double the recipe and use half to roll the balls in my organic pink peppercorns for an earthy, zesty, sensual treat that will add a beautiful color to your presentation.
If you really want to make them swoon -- take the other half batch of truffle mix, roll in cocoa powder, raw cacao nibs, and dust lightly with HimalaSalt using my HimalaSalt Zen Cube & Stainless Steel Grater the pairing of pure chocolate and HimalaSalt creates flavors that are sublime!
